What is it about?

This study summarizes the applications and analysis requirements of additive manufacturing in creating novel foods and matrices, considering the trends, global challenges, and research directions. Our findings demonstrate that path-planning strategies and engineered designs can improve food printing quality and shape complexity.

Why is it important?

Effective utilization of resources, keeping up with food trends, and tackling global challenges in food manufacturing and distribution are among the current urgent needs. Secure adaptation of the technology in food applications is significant to have a substantial impact on these issues. With additive manufacturing, more creative food designs and personalized meals become viable. More importantly, additive manufacturing enables not only good-looking foods but also opens up innovative design of the internal structure of foods where modifications lead to different textures.

Perspectives

This study aims to guide researchers and professionals in the way we create 3D-printed foods and their further processing.
