What is it about?
This study found there existed various degrees of strain variability in growth and thermal inactivation characteristics of 33 L. monocytogenes strains. The variation are especially important to the outcome of predictive modelling and risk assessment and should be carefully assessed from a food safety point of view.There these data are expected to give an in-depth understanding of strain variability to the risk assessment.
