Why is it important?

This shows that the caracteristics of dietary protein is important to the postprandial period. It also well illustrates that food comes with a matrix and the impact is more than the sum of the nutrients that are inside.

Perspectives

The impact of dietary protein on metabolism should be investigated taking into account the many caracteristics of protein, including the structure and its interaction with other nutrients in the "whole-food package", as studied here, but also the specific amino acids that they provide, since it may modulate the initiation of adverse deregulation in the postprandial period.
