What is it about?
This research is all about microbial growth kinetics, using mathematical modelling to explain how bacterial and fungal growth can be predicted in preservation of fresh cow meat. There are various models of such that are based on empirical studies. Here, we used tested mathematical and statistical models to calculate the growth of microorganisms.

Why is it important?
The research is very important in predictive microbiology.
Perspectives
Our perspective about this research is based on the use of empirical mathematical models in predicting microbial growth of refrigerated foods at different temperature and time. Which will enable scientists to make accurate predictions about the growth of microorganisms to reduce or totally eradicate food spoilage.
