We have investigated the milk quality characteristics of Native Southern Yellow and South Anatolian Red milks during lactation period.

Why is it important?

It is observed that Native Southern Yellow milk has higher dry matter, fat, protein, lactose, total saturated and unsaturated fatty acids ratios than South Anatolian Red milk.

Perspectives

It is observed that lactation stages, forage type and botanical diversity affect milk flavor and quality.
