Why is it important?
This study examined the potential of ethylene as an additive added during malting to improve malt quality. The study showed that, like gibberellic acid, ethylene promotes barley germination and unlike gibberellic acid, ethylene restrict rootlets growth. Both these effects of ethylene are desirable in malting
