Why is it important?

Total barley flour can present technological drawbacks for production of functional foods, so it's important to isalate bioactive compounds and molecules to be used for new food processing. Beta-glucan prevents from several chronic deseases.

Perspectives

As a perspective, it's important to preserve well beta-glucan and consider its nutritional and physiological properties when manufacturing of fiber-rich food products.
