This is drying carrots for preservation purposes and characterization of dried carrots slices for use in food preparation. The paper shows how different pre-drying treatments and drying conditions affect the quality of dried carrot slices.

Why is it important?

This is important for preservation of fruits and vegetables in developing countries as the post harvest loss is very high. Solar drying technologies are suitable in the tropical regions of the world with the sun providing intense radiation and heat energy almost through out the year. This makes it the cheapest technology available to the poor farmers and small scale producers and processors in the region.

Perspectives

Simple and cheap rural technologies need to be well understood and modified and distributed to the end users. Such technologies as solar drying are important in reducing postharvest losses of perishable produces and contributes to Food and Nutrition security in the regions.
