What is it about?

This study investigates how frying temperature and time influence the quality and oil absorption of four Peruvian potato varieties. We evaluated color, texture, moisture, fat content, and acrylamide formation to identify optimal frying conditions for each variety. Using statistical optimization and Raman spectroscopy, we demonstrated that different potatoes require specific frying conditions and that Raman spectroscopy can help monitor oil absorption during processing.

Why is it important?

Frying conditions directly affect the nutritional quality, appearance, texture, and safety of potato products. Excessive oil absorption and acrylamide formation are important concerns for the food industry. Our research shows that optimizing frying temperature and time according to potato variety can improve product quality and help control undesirable changes. Additionally, Raman spectroscopy offers a promising analytical approach for monitoring oil distribution in fried foods.

Perspectives

These findings provide opportunities to develop variety-specific frying protocols for the food industry. Future research should validate the optimized conditions at industrial scale, investigate different frying oils and processing environments, and explore the integration of Raman spectroscopy into real-time quality monitoring systems. Such advances could support more consistent product quality, improved process control, and more efficient food manufacturing.
