What is it about?

Butterfly pea or Clitoria ternatea flower is one of the best sources of natural blue colourant at the low acidic to the neutral condition. We studied the colour stability of this extract at pH 7 at various temperature.

Perspectives

There are several interesting facts in this research. First, we found that the butterfly pea flower extract was very stable at the refrigerator. Therefore, it could be used as a colourant in the chilled food and beverage. Second, we found that the colour stability of butterfly pea flower extract at 45oC was higher than at 30oC.
