What is it about?
Glucoamylase is an important industrial enzyme used for the production of glucose syrup. We have optimized its production by "one variable at one time" method and calculated the kinetics of Aspergillus oryzae growth. the related mycelial morphology was also recorded.

Why is it important?
As the resultant glucose syrup is used in food industries hence glucoamylase is a food grade enzyme. The production of this enzyme from GRAS (Generally Regarded As Safe) strain is very important for food safety concerns.
