Dietary fber plays an important role in human health. Te modifcation and application of dietary fber in foods is reviewed with respect to defnition and classifcation and methods for measurement, extraction, and modifcation of dietary fber. The supplementation of dietary fber for ﬂour, meat, and dairy products is also reviewed. Finally, the benefts and risks of increasing consumption of dietary fber are discussed.
