What is it about?

Dietary fber plays an important role in human health. Te modifcation and application of dietary fber in foods is reviewed with respect to defnition and classifcation and methods for measurement, extraction, and modifcation of dietary fber. The supplementation of dietary fber for flour, meat, and dairy products is also reviewed. Finally, the benefts and risks of increasing consumption of dietary fber are discussed.

Why is it important?

In this review, we describe our current knowledge on these aspects of dietary fber: defnition, determination, extraction, modifcation, and application.


Future methods for the extraction and modifcation of dietary fber will be needed for large-scale industrial production. Additional studies are needed to expand the application of dietary fber and improve its economic and practical value. Future work by nutritionists and scientists is also needed to determine the requirements for dietary fber intake and to guide consumption of dietary fber supplements.
