What is it about?
We evaluated the risk that a consumer suffer trichinellosis after consuming a pork meat sausage, taking into account epidemiological aspects. That is, we considered the prevalence of the disease in Argentine productions, marketing routes, social-economic-cultural problems associated with the consumption of these products and technological aspects. In addition, we identify the factors most associated with this risk and propose management measures to prevent them.
