The Effect of Emerging Technologies on Fresh Egg Interior Quality during Storage The objective of this research is to investigate different treatments on fresh eggs for maintaining internal qualities at ambient storage for 6 weeks. Effectiveness of shellac and lysozyme-chitosan coatings, gaseous ozone (6 ppm, 4 min) and ultrasound (450 W, 4 min) treatments.

Why is it important?
The eggs with the emerging treatments retained eggs functional properties and had their shelf life increased. It would be expected that combinations of novel methods, would have synergistic interactions and further studies will be needed to understand the mechanisms on egg shelf life. In this research, the best-emerging preservation techniques including various coatings, ozone, and ultrasound treatments to retain fresh like eggs qualities, have been studied.
Perspectives
The results of our study showed that compared to a control group of eggs, coating preserved the extending interior qualities and functional properties of eggs during the storage period. Our findings indicate that results of the study are suitable for industrial-scale application on shell eggs during storage and therefore shellac and lysozyme-chitosan egg coatings hold potential for their shelf-life extension with high value-added products and reduce economic loss from storage. Structural and functional properties also need to important determinants of food quality, as perceived by consumers and required to study by the egg industry. Our results showed that using hurdle technology can be promising for the egg industry as a preservation strategy with a combination of different techniques.
