Agave atrovirens is used for Pulque manufacturers. In this work we show that extracts from this plant show a high antioxidant content, that could be useful for further technical development. The extracts have been characterized using non targeted metabolomic analyses

Why is it important?

Pulque is an ancient beverage derived from azteca civilization. In ethnic medicine, has been attributed to some health-related properties, mainly related to gastrointestinal physiology. Here we show that a common extract of the plant used for pulque obtention exhibit antioxidant properties, that are related to a very complex composition.

Perspectives

In our view, sustaining potential health properties of a given extract, needs the scientific evidence behind. In an attempt to help this characterization, several techniques, ranging from antioxidant characterization up to mass-spectrometry aided chemometry can be used. This may help to isolating or characterizating the bioactive compounds behind specific physiological properties, and helps to valorizate traditional products.
