What is it about?

Inorganic arsenic is toxic and is contaminated through food and drinking water. We have analyzed inorganic arsenic content in food of Japanese children and pregnant women. Not like other countries, drinking water was not a major source of contamination in Japan, but food especially of frequent Hijiki seaweed consumers contained high concentration of inorganic arsenic.

Why is it important?

Hijiki seaweed is known to contain high concentration of inorganic arsenic exceptionally. Hijiki is popular as a food item high nutrient and is sometimes recommended to children and pregnant women. However, our results suggested that frequent usage of Hijiki adds daily intake of inorganic arsenic.
