What is it about?
Acetate cocoyam starch is one of the products made to determine the resistant starch content. The results show that acetate cocoyam starch has high resistant starch and that acetate cocoyam starch can improve the characteristics of native cocoyam starch.

Why is it important?
What is unique about this article is that the cocoyam starch used is local cocoyam starch, the results of acetate modification can improve the chemical characteristics of starch, increase the amylose value and resistant starch.
Perspectives
This article can be a reference for conducting further research to produce food products that are high in resistant starch as an alternative food for health.
