What is it about?
The effects of early post-mortem low voltage electrical stimulation (28 V, 60 Hz) on biochemical changes and on final tenderness in Longissimus Thoracis et Lumborum (LTL) muscle from donkey carcasses was studied.

Why is it important?
Use of low voltage electrical stimulation in donkey carcasses can improve some meat quality traits.
Perspectives
In future experiments in which electrical stimulation will be tested on donkey carcasses, it would be interesting to investigate the combined effects of the use of high and/or medium voltages electrical stimulation.
