What is it about?
'Tella' is one of the several, native fermented beverages, traditionally prepared and consumed in Ethiopia. Though, it is expected to be fresh until its consumption, its shelf life is short period of time due to its sour taste. Thus, the shelf life of the product is a critical issue. Hence, in this work we optimized the product to have a prolonged shelf life.

Why is it important?
Production optimization of a traditionally fermented beverage called 'Tella' has increase its shelf life considerably. This optimized protocol can be adopted to large scale production of it.
Perspectives
It gives me pleasure to see increasing in investor's interest to invest on 'Tella' production at commercial level.
