What is it about?
Using structural equation modelling (SEM), we analyzed survey data from 750 respondents across Italy, Romania, and Northern Ireland. Key findings: ✅ Knowledge of dietary risks and benefits (e.g., mycotoxins in legumes, processed meat risks, benefits of legume consumption) does not always translate into behavior change. ✅ The attitude of omnivores and flexitarians impacts their dietary practices. ✅ Risk-benefit communication could help consumers make informed decisions about their dietary patterns. What does this mean? Food and health professionals and aspirant professionals served as a best-case scenario, yet their knowledge does not always align with their practices. There is a need for risk-benefit campaigns as alternative protein sources are becoming mainstream.
