What is it about?

Many rice in Bangladesh are short grain and aromatic. Short grain is traditionally associated with low amylose, which is not healthy. We have shown that some of them have adequate amylose to be considered as a healthy choice.

Why is it important?

Many traditional rice which have short grains are prized by the local communities where these are grown. However with the prevalence of Diabetes, people are recommended to have rice with high amylose content which is a type of starch which digests slowly. However, traditionally, long grain rice is associated with high amylose. We have shown that the opposite is true for Bangladeshi rice.

Perspectives

It was nice to be able to provide information that if some people prefer eating short grain rice, they can continue to do so, without fearing for high blood glucose levels
