What is it about?

This study aimed to provide information on the effects of water stress on amaranth regarding the accumulation of metabolites responsible for nutritional value in terms of protein, oil, ash, fatty acid content, mineral elements, and proline content.

Why is it important?

As water restriction increased, protein, ash, Ca, palmitic acid, linoleic acid,linolenic acid, arachidic acid , saturated fatty acid, polyunsaturated fatty acid, and proline level increased, while oil, stearic acid, oleic acid, Fe, and Zn decreased for amaranth.

Perspectives

In the Mediterranean region, amaranth is an important plant that can be grown without irrigation.
