What is it about?
It is common in industrial processes to use a single strain. This study demonstrated that by using two strains of yeast the speed and yield of ethanol fermentation could be improved. Other studies have shown that by mixing yeast and Zymomonas the same effect could be achieved.

Why is it important?
Different strains release different metabolites which can be re-used by another, this joint action leads to enhanced fermentative performance.
