What is it about?
Pseudocereal proteins have attractive biological properties that may be useful in combating chronic noncommunicable diseases. Therefore, its addition to the most consumed processed foods may be important to reduce the risk of these diseases. This review seeks to demonstrate how different modification methods can impact the structure of these proteins, so that their application can be extended.
