It shows the maximum amount of methane that can be obtain without violating the laws of thermodynamics.

Because it shows the thermodynamic limits of biogas production. It suggests that even if we try to genetically modify methanogen bacteria we cannot produce methane beyond the thermodynamic laws (mass, energy and Gibbs free energy constraints)
