What is it about?
Kunu, is a locally made beverage drink from cereals. Basically, its production is at village technology level with no regard to production safety protocol and hygiene level. This exposes the drink to microbial contamination. This work has employed best microbiological detection strategy to unravel the level of microbial contamination, safety level in line with NAFDAC and FAO guidelines for permissible microbial load in cereal products and the antimicrobial agents that are effective in treatment purposes in case of food borne disease outbreak from consumption of the finished products.
