What is it about?
Ibyer is a gruel made chiefly from cereals like millet and sorghum. It is consumed chiefly amongst the Tiv speaking areas of Benue state, Nigeria as a breakfast meal. In this study, we were able to incorporate tigernut into ibyer production and shown it has the potential to lower fasting blood glucose in diabetic rats. fed the diabetic rats with the test diet after which fasting blood glucose of the rats was checked at intervals.Thu

Why is it important?
Our findings show that, this product could have potentials in the management and treatment of diabetes, thus further findings and studies cold better explain the working mechanisms as well check the efficacy of the products in human subjects, thereby giving new insights to the potential of using local food materials in the development of diets for healthier living especially in the developing world.
Perspectives
We hope that this article will spark local consumers and indeed the international community to consume more of minimally processed foods
