What is it about?
This study discloses the ODC system in spoilage bacterium S. baltica, especially reveals the complementary role of SpeC in balancing intracellular putrescine level with SpeF-PotE operon and in catalyzing ornithine into putrescine at acid pH 6.0. And the dual function of ODC system in cytoplasmic alkalization and extracellular putrescine production of S. baltica partially explains its ability to be the dominant spoilage microorganism in seafoods. The results expand our knowledge of the generality and “personality” of ODC system in different microorganisms, and provides a novel target for seafoods preservation.
