What is it about?

This work aimed to carry out a review of the literature on the quality of beef traded in the retail sector, as well as on the methodologies used for quality evaluation. The findings of this review confirms the existence of a worrying scenario, risk to the consumer of fresh meat and in accordance with reported conditions the need for interventions, with a view for the prevention of health risks, continued training of food handlers and transformation of evidenced realities.

Why is it important?

The protection of fresh meat sold in retail is of great importance for public health and food security. Findings reflect the situation of a subset of studies, mostly coming from cities that face a series of contingencies related to hygienic and sanitary control at the meat vending locations. It is worth noting that meat trade in the street markets of developing countries demands greater attention from regulatory agencies, as a public health defense system.

Perspectives

The dissemination of this review may contribute to orientate actions for the retail sector, synthesize information for the consumer market, as well as emphasize the key role of the consumer in the modernization and safety of the production process of meat.
