What is it about?
16S rRNA amplicon and shotgun metagenomic sequencing are now routinely used to examine the microbiomes in many environments, animal domains and, more recently, in food. Here we describe the microbiomes of cold smoked salmon filets during cold storage and, after culture enrichment to identify potential sources of spoilage and pathogenic bacteria.
