What is it about?
Hypochlorous acid (HOCl), commonly measured as free chlorine, is often used as a sanitizer in tomato wash water to prevent the cross-contamination of Salmonella. Current regulations require high concentrations of sanitizer to be present in the wash water. In this study we examined lower concentrations of HOCl to identify its effectiveness at preventing cross contamination.
