What is it about?

Fecal matter are a known source of psychrophilic Clostridium spp., including C. estertheticum. that cause Blown pack spoilage of chilled vacuum packed meat. We have shown that not only can C. estertheticum and C. estertheticum-like psychrophilic Clostridium spp. be detected in fecal samples, but the age of cattle may have an influence on shedding of these particular group of microorganisms.
