What is it about?

Simplification of HACCP documentation is important for successful implementation of food safety management systems based on the Codex HACCP principles. I have presented a simplified flow diagrams resulting in shortening of the system documentation.

Why is it important?

The process of development of HACCP documentation in a small restaurant, as presented in this paper, considerably reduces the volume of HACCP documentation due to a shortened product description and introduction of simple flow diagrams.

Perspectives

I hope this article will be an inspiration to search for simplified HACCP documentation in catering and food service.
