In this work an edible antimicrobial guar gum coating was developed and nisin, and oregano oil to increase the shelf life of chicken breast fillets under refrigerated conditions

Why is it important?

Fresh chicken breast is a product with a very short shelf life mainly due to microbial contamination. The development of antimicrobial coatings can be a solution to this problem.

Perspectives

In the future, edible coatings can be combined with active packaging plus modified atmospheres to maximize shelf life and minimize the rate of deterioration.
