What is it about?
Phenolic compounds are important compounds for food applications and citrus latifolia waste is a promising source of bioactive phenolic compounds, in this sense, its extraction through ultrasound-assisted extraction favors its yield. Additionally, chitosan can act as a promising material to encapsulate phenolic compounds in nanoscale improving the biological activity of the compounds.
