This mini-review covers the biochemistry of fatty acid and lipid synthesis in marine microalgae. The impact of the different fats on health is discussed.

Why is it important?

Microalgae are microscopic photosynthetic organisms living in any kind of aquatic environments. Those living in the oceans are responsible for up to 40% of primary productivity. Thus, microalgae constitute sthe bsaement of most of foodwebs. Under stress, microalgae produce high-value molecules such as fatty acids. These fatty acids are stored in triglycerides that are all produced in the plastid through complex biochemical exchange between the plastid envelope and the endoplasmic reticulum. The health-promoting properties of fats and long-chain polyunsaturated fatty acids of microalgae are widely recognized.

Perspectives

Microalgae represent an important alternative plateform for the production of active compounds, including fatty acids.
