What is it about?

Melon seeds are relished in different cuisines worldwide. Peeled melon seeds are more convenient to package and use because it is difficult to dehusk the melon seed and suitable mechanical peeling methods are still in the process of being developed. This research reports on the quality of peeled melon seeds, stored in 3 different packaging materials. The nutrients in the melon seeds get depleted over time. Emulsion capacity gets reduced, while the other functional properties (bulk density, foam capacity/stability are unaffected. The vitamin and mineral content reduce except for magnesium, zinc. The fat goes rancid affecting the flavour of the food. Packaging peeled melon seeds in the Brown hessian bag will keep the quality of the product acceptable to the consumer for 3 months.

When properly stored, in Hessian bags, peeled melon seeds will maintain their nutritional functional and culinary qualities for 3 months

Perspectives

Unpeeled melon seeds are cumbersome to dehull manually and consumers prefer to purchase already peeled seeds for culinary purposes. If properly stored in Hessian bags, the stored peeled seeds will not lose their nutritional, functional and flavor qualities until after 3 months. Fat rancidity is the most obvious or noticable cause of loss of quality
