What is it about?

Cork porosity is the main criteria to establish wine cork stoppers industrial quality. The amount of oxygen that passes throught the stopper for the wine is importante and allow, in red wines, the development of sensory features. Using X-ray microtomography we have shown that is possible to see and quantify the porosity inside the cork stoppers and that the void spaces are related to the OTR (oxygen transmission rate).

Why is it important?

Our findings show that the porosity in the inner part of the stopper is related to the oxygen amount that interact with the wine.

Perspectives

The possibility of quantify the porosity and OTR of a cork stopper a priori give the possibility to wine makers to select the "perfect" stopper to their wines.
