What is it about?
This is a review of some of the properties of gelatin, a major food ingredient and one that is of concern to many people who follow special dietary needs, e.g., pesca-lacto-ovo vegetarians, kosher, halal, Hindu dietary laws.

Why is it important?
There is a real need for alternate sources of gelatin, particularly fish gelatin which meets dietary needs that are not otherwise being met.
Perspectives
We have been working to learn more about fish gelatin so that it can be made available to the various communities that need it. As head of the Cornell Kosher and Halal Initiative this has been the research component of that teaching, research and extension (outreach) program.
