A standard group of descriptors for cashew flavor and texture was developed by a trained descriptive sensory panel.

Why is it important?

This lexicon will allow for evaluation of cashews and cashew products between various sensory panels using standardized wording.

Perspectives

Lexicons are in place for many foods including peanuts and some tree nuts. This is the first report of one for cashews.
