What is it about?

Unripe grape products are rich with organic acid and phenolic compounds. These compounds have antimicrobial effect against food borne pathogens. We have shown antibacterial effect of unripe grape products. So, these products could be evaluate as natural preservatives.

Food safety and quality are very important for human health. Nowadays, people comsume ready-to-eat foods. These foods are contained chemical or synthetic additives. These preservatives have adverse effect on human health. So, natural preservatives are very important for food safety and quality.

Perspectives

In this paper, plant based products are investigated as natural preservatives. The results have shown that unripe grape products could be evaluate as natural preservatives against food borne pathogens due to their organic acid and phenolic compounds.
