Peanut roasting produces different colors depending on the times and temperatures at which the process is performed. Using the most widely grown type of peanut in the USA, the study was performed to determine which settings are best using an industrial roaster.

Why is it important?

Consumers prefer a specific color in peanuts that corresponds to the optimum amount of roast peanut flavor. By elucidating the kinetics of the process for the most widely grown cultivar in the USA at present, this publication allows industrial roasters to determine the time/temperature combination that produces specific roast peanut color.
