What is it about?

Vitamin A biofortified yellow cassava was introduced to address the problem of vitamin A deficiency in sub-Saharan Africa. We have demonstrated that in addition to improving the vitamin A status of children and postpartum women, yellow cassava consumption also improves blood glucose concentration due to its low glycemic index.

Why is it important?

Food products with moderate or low glycemic index offer good energy source to persons undergoing weight management and to diabetes. Based on data from this study, vitamin A biofortified yellow cassava could serve as a healthy energy source for these individuals.

Perspectives

It is my desire that this article reaches to the larger audience so as to create a better awareness on the inherent health benefits the newly introduced yellow cassava has to offer. I feel really great having received some calls from individuals seeking clarifications on this food products.
