What is it about?

Irradiation not cause negative effect on sensory quality. Microbial counts and biogenic amines were reduced by both storage and irradiation without harming the chemical properties. The total content of biogenic amines reflects the safety of irradiated cheese and also indicates a high-quality product in comparison with non irradiated samples.
