What is it about?

Fish meat quality is relative to fat content. The cultured large yellow croaker has high fat content in muscle. Fasting can decrease fat content in muscle, and promote the meat quality. This paper described activities of key genes in fat metabolism, and their roles in decreasing muscle fat content. Based on our study results, we suggest that 21 days of fasting can effectively promote meat quality.
