What is it about?
In this work, we develop a model to represent how the physicochemical shelf life, color, and firmness of pineapple slices change in a system of equilibrium modified atmospheres (EMAP) at refrigeration conditions
Featured Image
Why is it important?
Cut pineapple has an extremely short shelf life, which is why a suitable packaging system is required and an evaluation of how this shelf life can increase depending on the O2 concentration and temperature
Perspectives
The purpose of these studies is that the most appropriate EMAP system can be configured for minimally processed products such as pineapple using modeling and simulation and integrating biodegradable packaging materials.
