What is it about?

This study was to assess the properties of Panela cheese, in terms of its yield, sensory acceptability, and chemical composition, particularly the FA profile, produced in cows grazing in an intensive silvopastoral system with L. leucocephala in the Mexican tropics.

Why is it important?

Our findings show that chemical composition and yield of Panela cheese produced in an ISS with L. leucocephala and C. nlemfuensis or in a traditional MS with C. nlemfuensis only were similar. However, Panela cheese from cows grazing L. Leucocephala was healthier in terms of its FAs profile and was more acceptable to humans than cheese manufactured from cows grazing a traditional monoculture grass system. The intensive silvopastoral systems may be a more sustainable feeding option for producers compared to the traditional monoculture systems.
