What is it about?

The food industry is evolving rapidly due to new converging technologies like Analytics & Big Data, Biotechnology, Advanced Materials, Blockchain, Artificial Intelligence, 3D Printing, Sensors & IoT, Nanotechnology, Robotics, Nutraceuticals and Molecular Agriculture. Our study explores how these technologies are changing every step of the food value chain, from farm to table. By analyzing thousands of research papers, patents, and startup investments, we highlight the latest advancements and show how they can make the food industry more competitive, especially in Latin America. We also created a digital tool that helps industry professionals easily find and use this cutting-edge information to foster innovation and economic growth.

Why is it important?

This work is relevant because the food industry is under pressure to innovate faster, improve sustainability, and strengthen food security. Its unique contribution is that it combines scientific papers, patents, and FoodTech startup data to map where converging technologies are reshaping the food value chain. The study offers companies, policymakers, researchers, and entrepreneurs a practical view of where innovation is emerging and how Latin America can turn technology adoption into competitiveness and development.

Perspectives

This publication is valuable because it gives innovators in the food industry a practical map of where technology is moving. Innovation often fails when companies look only at trends, suppliers, or isolated technologies. This work connects scientific research, patents, and FoodTech startups to show where real opportunities are emerging across the food value chain.
