What is it about?

People are increasingly concerned about food and health and seek for enriched products. One way to add nutritional value to yogurt comes from the addition of nutritional flours. However, it is necessary to optimize formulations that meet the consumer desires. This study optimize an enriched yogurt, showing that it is possible to add value to the strawberry yogurt maintaining their sensory quality.
