What is it about?
Fatty acids are determinants of triglyceride properties. Unsaturated fatty acids in oil have the potential as antimicrobial agents. Our results have shown that the fatty acids from tamarind oil are antibacterial against S. aureus and E. coli. Although the oil does not show this.

Why is it important?
Important findings of this research are: a) fatty acids have stronger antibacterial activity than the oil, and b) tamarind oil is one source of unsaturated fatty acids.
Perspectives
This article also leads to exploration of renewable natural resources for the benefit of welfare, especially health. I am pursuing fatty acid chemistry in various vegetable oils, especially food vegetable oils.
